What knots should I use for the following?

Rope to shackle
Rope to ancor (not using shackle)
Rope to docking cleat (for the other end of ancor line; needs to be easy to come apart)

Also, how would we attach a rope to a chain, and the chain to the ancor?

For the most part none :)

You should buy rope with a thimble braded in and use shackles to make the connnections

The shackle will chew right through unprotected line

When tyeing the anchor to cleat on the boat i would use a cleat knot

there are a lot of knot sights on the web to show you how to tie them

Assuming 3 strand line:
1) Shackle Splice
2) Bad idea, just throw the anchor overboard instead of waiting to lose it.
3) Already shown above, sort of, but the other end of your anchor line should be tied to your boat at all times with a bowline knot. You tie onto the cleat at whatever point in your anchor line you need to, but you won't have an end, so you roll the loop under and lock it in like a dock line.

4) Shackle splice or chain splice (depends on diameter of link) although I use and prefer a swivel shackle as it keeps your anchor line from twisting and looping up on you.
5) Shackle

Also remember that you should have a minimum of 5 times as much line as the water is deep where you plan to be anchoring.
