Could some tell me how I go about changing the leg oil before i winterize the boat

The lower one [drain] and the upper one [vent] both need to be removed and the oil drained into a receptacle. The oil will drain more completely if the motor is in the running position. A large screwdriver, like 3/8, will help.
Once drained you will want to force the new gear oil in from the drain hole until it runs out of the vent hole. As soon as the oil appears, replace the vent plug first, then the drain plug.
Most folks here recommend that the plug washers be replaced to insure a watertight seal.
At best, this is a somewhat messy job so have a few old rags for a cleanup.
