High Temperature Alarm sounding

I put my boat back in the water yesterday. 2003 Maxum 2400 SCR, 220 HP Mercruiser w/ Alpha 1 Gen II drive. I replaced the bellows, water pump and gear lube before putting it back in. Boat ran great and actually ran the fastest it has ever gone. 39 MPH via dash gauge(didn't have my GPS). Anyway, I took it for a little 30 minute ride. The second time I got up to speed(30+ MPH), as I was coming off plane the alarm sounded. I but the boat in neutral, alarm was still on, so I shutoff the engine. Tried restarting it a minute later and the alarm stayed on. I check the oil and it looked a little low so I added half a quart. Start the boat up, no alarm. Going back I get on plane crusing over 30 MPH, start coming off plane and the alarm goes off again. All guages look fine. Oil Pressure @ 60, Temperatue @ 175. I shutoff the engine wait 10 seconds, no alarm. I do the test one more time, but this time I disconnect the temperature sensor. Get up to 30 MPH, coming off plane no problems. The reason why I immediately disconnected the temperature sensor is because I had this problem two years ago on the first day I put my boat back in the water. I went through disconnecting each sensor one at a time and it came down to the temperature sensor. I replaced it via my dealer under warranty and the problem disappeared. Now two years later it seems like I may have the same problem again. Has anyone else experienced this problem or have any other suggestions? I'm almost 100% certain the temperature gauge is accurate as it is acting like it has for the last 5 years. When I first start the boat it slowly makes it way up to 175. The day before while on blocks, I ran the engine for 20 minutes with the ear muffs on it. No problems. Water coming out both sides of the outdrive exhaust. Water temperature felt fine. Again this only happens coming off plane. I can run at all different RPMs and it is fine.

Suggestions?

Leave it disconnected,+ Watch the Gauge,......................................

That alarm sounds for 3 things.
1 Overtemp
2 Low oil pressure
3 Low gear oil reservoir level.

Did you look at the gear lube reservoir??????

I vote with Don, check drive overflow or disconnect the wires running to it. I bet the alarm goes off!!

The drive lube is fine. I've already disconnected the high temperature sensor and the alarm has stopped going off. I guess my real question is, Is it normal for the high temperature sensor to be replaced every two to three years?
