Anyone have some favorite Chili recipes? I am sure we have done this one before, but it can't hurt right?

I made Chili on Saturday......

1lb steak
1lb pork
1lb venison
ground cummin, chili powder
3 cups hot salsa
2 jalepenos
salt and pepper to taste
3 bottles of beer (I used a lager and a dark beer.....then a draft beer when the chili got thick during cooking)

I seared the meat in my dutch oven, added all the rest of the ingredients nd gave it a good stir Covered and put it in the oven for 4hrs at 350F.....adding beer when necessary.

Tyme......its always nice to dine with fellow fans :)

The salsa was a little different......Alton Brown did it on Good Eats, which made sense and saved me a lot of time.........since I didnt have to chop all those vegetables.

Wow..... I love to make chili but use straight venison. I am addicted to spicey food and love hot sauce (the flavorful stuff). I made some chili once while the wife was out and added a whole can of Chipotle peppers in Adobo sauce..... OMG it was the hottest I ever made. You would eat a bite and say hmmmm great flavor then it would creep up and set you on fire.

I mean head sweating painful fire!! :eek:

Lesson learned only to use a 1/4 of a can of Chipotle peppers in Adobo sauce and freeze what is left.

I probably have 12 differant bottles/types of hot sauce in the house.

A great hint if you enjoy some spicey chili is to go to a mexican food store (or in the ethnic aisle of a good market) and pick up a few types of the mexican sauces. They are cheap and have the best flavor. Actually cheaper than most hot sauces in a normal market.

I'm making chicken soup with bread sinkers today......maybe I will take a picture :)

Wow that did it for me. 9pm and I'm cooking chili...
No beer..... bummer but plenty of steak and chili peppers

Daggonit... I grilled up a whole rack of burgers tonight with bacon and mushrooms. My wife made coleslaw and cheesy potatoes.

I should have taken a picture of it and posted it for Pony. It looked as good as (and tasted, I bet) as good as his Chili.

....that looks smokin' good and I will try some type of take on that the next I make chili (...glad we're already finished dinner, that would have changed the menu tonight)
Here are a couple more things to consider as ingredients: Dijon mustard, red wine (as an alternate to the ol' favorite beer) and italian sausage. I always include these and it adds a great flavour to the regular chili flavour.
Somedays (or some nights) you have to put aside the pure healthy stuff and have a meal like that.......wow makes all the 'Salad & Greens' nights not so bad.
