What is a good operating temperature?

what temperature my engine should not exceed and what is normal ?. i notice mine intend to increase at hi speed .

That depends on if you are raw water cooled or closed cooled......
160 for raw & 180 for closed.......
Anything over 190 & you definately have a problem......​

my gauge dont even budge when it is idling ,only at hi speed it intend to go up more ...so should it be the reverse in this case ?

From what I remember from previous engines, it sounds like your thermostat has been removed. the engine may have been over heating and a previous owner removed it. I would start by replacing the impeller (Pretty Cheap and Easy) see where that leads, if no change, replace the thermostat (Also cheap but not quite as easy)

I have a 140 stat and after a hard run and an idle down it'll go to 150. After that at idle or taking back off It'll drop to 140ish. Raw water cooled here.
