Out of curiosity, what is the price difference between the two power choices?
The more load you plan to carry and more water sports you'll do with a full boat the more i'd lean towards the 5.0L V-8. You'll "notice" the load much more with the 4.3L when getting on plane or pulling up a skier. However, with a few on board and just cruising around you may prefer the 4.3L .
Tough call, but based on how WE use our 19' BR (always lots of "extra" kids/adults along and always pulling something) I'd go with the V-8; but that's us, not your family.
Check the Tahoes very carefully, some really bad reports from recent owners. I checked them out at the boat show and was surprised to see loose screws, some bad fits, etc. I know their are some happy tahoe owners also, so just check them out closely is all I'm saying.
