Water in cylinders probably means a head gasket. Also an old weak or damaged impeller can provide pretty good cooling at low rpm but will ride away from the pump case and not pump good at higher rpm. Any time you buy a used boat, the first thing you should do is replace the inpeller. Even though it looks OK, it may have softened and not do the job. Check out that water in the cylinders. That can cause serious damage. Be sure head is not warped before you put it back together .

Also, probably would be a good idea to replace the thermostat

Almost sure it's a head gasket or warped/cracked head. I see this in Automobiles in my shop all the time. Classic symptom.

Just because you got the water out of the cylinders doesn't mean it will stay out. If you keep running it, you will ruin pistons, block, bearings and more. Like Spookeay said, as well as what I told you, this is serious. There may be a crack from an improper winterizing job. Better open it up and do some serious searching. May need to take the head to a shop to have it magnifluxed to find a crack and checked to see if it is warped. Could be more than just a head gasket.
