You probably won't find any kind of schematic for a boat that old, and TBH you don't really need one... the biggest concern is the engine harness... if you have that done, and working, then the rest is fairly easy... you would simply need to plan a layout and make a harness... being that old it may not have had much in the way of instrumentation... once you post your pics include one for the dash so we can see whats there...
The easiest way to re-wire a boat is to run one set of black(-)/white(+) primary power wires off the battery up to a switched fuse panel (of your choice), (example:
Panel) then attach your electronics via the panel... this elimates the need of tons of inline fuses or a seperate fuse block, uses less total wire, and keeps things simple and neat...
My boat did not have one single gauge on it, just one push/pull switch for the running lights... I added in a lighted tach, lighted speedo, bilge pump, livewell pump, radio, and courtesy lights all off the switched panel... its really easy to do, and we can help you out
