What is the difference between these two besides the composite vs aluminum? Is aluminum material that much more expensive to manufacture vs composite. I'm getting ready to order a set for my 16' Sailfish w/ 115 yamaha outboard. The aluminum is nearly 2x the cost.

Also, my transom has the step look to them. How does that affect the install location? Should I install just to the right of my speedo pic there? That was an old photo, my FF xducer now currently sits there.

Actually their Stainless not Aluminum. I would think to the starboard (right) side of your speedo would be perfect. I have Stainless on my boat with very similar hull, and she jumps on plane instantly!

You get better performance when mounted as far outboard as possible, they can be mounted in some but you then have to be careful of engine/outdrive clearance. It looks like you have plenty of room to mount on the outboard side of the transducer since you say that is what is in that position now.

Wouldn't the smart tabs affect the transducer operation?

I don't think they will, the transducer is in the water right at the transom and undisturbed by the tabs as long as you have a couple inches between. You are moving forward so any disturbance in the water will be behind you and the transducer.
