1978 Evinrude shift linkage, stalling

First post, might as well just jump into it!

I've got a 1978 Evinrude 55 HP. It is set up with a remote (console). The nylon fitting that attatches the shift cable to the shift lever in the engine cowling broke. What is the name of this part, and do I need to buy the whole cable or can I just replace the fitting? It looks like there is a pin holding the fitting onto the cable end but I can't figure out how to disassemble it. Any suggestions on where to find a replacement? I would prefer to shop on-line as the nearest OB mechanic is an hour away.
Issue #2: The motor runs like a champ from idle to full throttle, but it wants to stall when I put it in gear from idle. If I put it into gear and give it throttle slowly, sometimes it will take off, then it runs fine. It only does this in the water (under load), not with earmuffs. It seems like it is fuel starved. I've cleaned both carbs. What should I check next?

stalling is probably 99% idle speed set too low, idle has to be set in the water, with the motor in gear.

Part #7 looks close, but not quite what I've got. The part I need is a nylon fitting, about 3-4 inches long. It fits over the shift cable, the other end has a fitting for a small bolt. There is a metal pin, about 3/16 in diameter, near the end that attatches to the shift linkage. It seems logical to me that this somehow locks the fitting onto the cable, but I can't figure out how to get it apart.
