Merc V-200 am I crazy

I have being going crazy with my motor issues. The motor is a V200 serial number 6625602. 380 hours on the motor. My motor has normally been running great, except for coming on plane. 19 foot Norris craft, I am running a 25p Tempest. But when I will punch it down to come on plane the boat will not turn over 2000 rpm so it just won't plane out. It just bogs down, so I tought is was a fuel problem. I can still run about 65-70 mph once of plane. This started the last month to last month and a half. Before this everything was great. Now if someone is fishing with me they need to move to the front of the boat, and this was never before
I have changed or rebuildt the fuel pump, all new gas line, new primer bulb. Ran seafoam, even did he Merc power tune treatment.(god that stuff stinks). Changed plugs, got spark on all cyn. The motor use to have a electric fuel pump on it, becuase it would like run out of fuel @ 80mph. I removed it becuase I don't have the cojones to run that fast anymore. So I bought another Marine low psi fuel pump, still the same thing.
O course I think the worst, I do a compression check, when the motor is warn, I have the following

I see no problems there.
Today I put my spare prop on the boat, it is a small hub, laser II 24p. No problems at all, just blow out on break over. Rpm are higher than I like, 6000 would like to have it back in the 5800
My question is does anyone know what could be my problem?
I still have the idle control module of this mercury, but I don't know if that is it or what...I don't believe it is.The water temp on Dale Hollow is the high 80's, someone told me it was the water temp causing it. ( I doubt this too)
I just don't know, I am going crazy, work 5 days a week for my wife and kids, and 1 day a week for me too fish. But I can't fish becuase I am worrying if I can get back to the ramp.

Please any help suggestion I would be very very very grateful. Thanks in advance

The additional load of the larger pitched prop requires a slightly richer idle mixture to provide the additional fuel necessary for acceleration.

Test this my momentarily bumping the choke/enrichener as you hit the throttle.

If this improves your hole shot then you need to get into your carbs.

Without adjustable idle jets it may be possible to fatten idle mixture by slightly raising the fuel level, adjusting the floats a 1/16 lower with the carb inverted, this will decrease the air pressure required to push the fuel thru the passage, richening the mixture. Other wise you will need to change the idle air bleed jets, increase one size.
