Ok, so I took my boat to the nearest Merc. dealer, 3 hrs away. He INSISTED it was the water pump and I told him I didn't want to start throwing parts at it but if he was sure I would agree to let him change it. I asked him on the phone when I set up the service appointment if a thermostat could be the problem, he said "Highly Unlikely". I questioned him as to why the Water Pump/Impeller had to be changed so often. (The manual says every 3 yrs or 300 hours, my motor is 5 yrs old and has 200 hrs on it) His answer was that it was a regular service requirement just like an oil change and you could easily have ran it up on a sandbar and it sucked sand in causing damage. I run my motor in clear water lakes and it has bumped bottom, for a split second, once since I have owned it (2 of its 5 yrs, 165hrs of its 200 hrs). So I dropped the boat and he said to come back in a couple of hours. About 1.5hrs later I get a phone call from him saying that they found the problem and it wasn't the water pump just the T-Stat. Of course he didn't have one in stock. At least he agreed to order me one and send it to me so I can change it myself. I was a little ticked after his insistence that it was the water pump. I asked if he inspected the impeller and he said no once they found the bad t-stat they didn't go any farther. I didn't press it any more, paid him almost $100.00 and drove 3 hrs back home. Today I took the t-stat out and took the boat for a test run. The temp never got over 104 deg F. Hopefully my new t-stat will show up in a few days and I can get it back to normal. I will be buying a service manual.
