How do you know if you have a temperature switch or sensor? Also, where is the location of each? This is a 1990 Rinker 4.3 Mercruiser

A temp switch is an on/off device and would be used to turn a TEMP light on or off. If you have an analog temp gauge, a sensor is used.

had a valve job done and when i got the boat back the temperature gauge didnt work. I replaced the sender and found a wire that was left off. But now It dosent seem to get any warmer than 120 degrees, It use to be up around 160 to 180.

Are you sure you installed the right sender for your gauge?
If you found a wire off, did you try it with your old sender? What color was the wire you found?
Is there a thermostat installed?
