Could i replace the water deflectors in my water jackets from rubber tubing from a hardware store? Any special tubing/rubber for the application?

Do i need to pull the head cover (the plate that the spark plugs crew into) to take off the head itself? I need to replace a head gasket, water deflectors and clean the water jackets. I'm trying to avoid buying the head cover gasket! I have a Clymers manual but it's not clear! Please help....
