Does anyone have an idea how I can remove/restore the mph gauge on my bayliner as it has yellowed over time. Any help would be greatly appreciated.

Im in the process of bringing my newly purchased 91 Capri back to life and would like to dye/paint the engine cover (light gray) as it is full of marks and dull looking etc. Does anyone have any sugestions on what paint to use that semi looks oem? Any help would be greatly appreciated.
