I would not hesitate to use oak it has been used for centuries to build boats and ships, and it is hard to beat the look of a nice piece of oak. Put several coats of spar varnish on it and you will be good to go.
I would be prepared to lose a few, but that would indicate they aren't as hardy and unsuitable to breed from anyway. When I moved the mice from the hot upstairs to the cool basement last year, I lost two. It just happens to weak individuals in temp. shifts sometimes.

I have used a small piece of leftover composite exterior trim 3/4" thick that I used on my house. Applied the block with an exterior all-purpose construction adhesive. Stayed stuck to my last boat through the life of 3 transducers under extreme abuse for the entire 7 years I had it.
All I have ever used were deep cycle batteries and I have had 3 larger boats all with big block V-8's. One boat with 454's, one with 460's and current boat has 496's. No issue with starting.
