    do not run a boat motor without a thermostat. the thermostat is operated as a mixing valve to regulate flow to the exhaust manifolds big red flag. look for other evidence of freeze damage to the manifolds themselves as well as the motor.

    pretty sure the rev limiter in the software is near 5100 RPM. IIRC its a soft limiter on the EFI motors that simply starts cutting spark and fuel by a few cylinders at a time.

    Are there marine exhaust manifolds for the old Mercedes. If not, consider a different motor. Water cooled exhaust and turbos are a must You will need to change the gearing in the drive for a diesel. The AQ130 are Volvo motors. Switching to a GM pattern is a different PDS housing
