    You should have sufficient access to the water inlet to replace it if you trim the drive all the way up, as shown in the video below. Otherwise just pull the drive off. You don't need to separate the upper housing to replace it.

    Great! Maybe cycle the steering wheel back and forth with the engine running to ensure any air in the steering system is purged. I'd keep an eye on the fluid levels. Air should not be getting introduced into a good tight system.

    Many folks here don't bother with filling the hubs with grease via the zerks. They just repack the bearing during their regular maintenance, typically yearly. This gives you an opportunity to check for water in the bearings and bearing and race condition.
