This is more of a general mechnical question. Why are there two temperature sensors (one in the thermostat housing and one in the cylinder head)?

I recently purchased a new boat and after taking it out for the first time i noticed that the temperature gauge shows about 100F even after the engine ran for a while.
I did some troubleshooting by running the boat on the ear muffs and after 10 min of idle the temp gauge moved slightly above...
