On a noisy, crowded ramp at dusty dark, I made a mental error and pulled my boat out of the water with motor idling. The motor ran for about 20-30 sec. max before shut off. What is the possibility of water pump impeller heat damage in this period of time?

good chance for damage. Take a look at it. Not very expensive to replace.

Re: 115 Mariner Water Pump

If there is still a good telltale stream coming from the motor, can I wait until winter shut-down to have the impeller looked at/replaced?

I don't have the facility to try replacement , and the local dealers are still pretty busy. I use the boat weekly, but usually for short runs of 10 minutes or less. If the impeller fails completely, I'm assuming the telltale would quit. I can always get home with the trolling motor if this happens.
