1954 7.5 hp and 1975 70 hp questions

My 1954 7.5 hp evinrude motor. i got it brought it home. new impeller new gaskets. I put it in bucket of water pees strong very easy to start, sounds nice. I take it to lake put it in water starts so easy sounds great in idle turn handle to shift put it in forawrd throttle, motor begains to sputter then slowly dies out about 3/4 throttle. What could be causing this? I noticed on one of my spark plugs the firing is red. On my 1975 70 hp evinrude My bottom piston is reading 95 compression and the top and middle are reading 125 what could have caused this and what could fix it? This motor also starts fine then put it into gear and sputters and dies out. Sometimes it will run in gear but it takes awhile to speed up. When i shut the motor off it is a pain to start back up. It takes awhile b4 it will start back up. Thank you all for your help and for taking the time to read this. thank you.

on the 54 search Joe Reeves post on "setting high and low speed" your motor should have 3 knobs on the front choke, high speed, low speed. the high and low speed need to be fine tune while running in the water. you may have to take the knobs off because some have stops on them. the 75 may have a blown head gasket, hope it's that simple.
