1956 Wagemaker Wolverine - where to start?

I just picked up a 1956 Wagemaker Wolverine with a 1964 Lark 6 Evinrude. Pictures attached, blue-white-yellow exterior. It has not been in the water according to the owner since 1988 and stored in their garage where I picked it up. It has been painted on the entire exterior. The paint is dry and brittle. The interior appears to be varnished with the exception of the hull area under the floor panels on either side of the keel, presumably to water proof as the owner had installed a hand bilge pump at the front edge of the front seat and ran a pipe out the side behind the seat.

I plan to start removing everything and start stripping down to bare wood. But then what to do? Clean up all joints, tighten; do I use 5200 or fill-it? Fiberglass the hull, use a filler stain, clear coat and varnish or use a penetrating epoxy barrier coating.

If all the wood between the splash guard and the check mark looks good I would like the final finish to look something like the green and wood tone picture of another Wagemaker that I found on the internet, attached.

Do I need to do a dip test once I have all of the seats and interior fittings removed before I start stripping it?

When finished the boat will be used in the Chesapeake Bay, salt / brackish water.

Anything you can suggest to point me down the right path with the correct products that you offer would much appreciated. I?m sure that you have everything I need, I?m just not sure what supplies to start with.
