1958 10hp. evinrude <10016> head bolt

Will any stainless steel screw of the correct size work, or do I need to find an original? These torque to 12 - 14 ft lbs.. I think?

Head bolts expand and contract at a given rate because of their uniform hardness.
Placing a different hardness bolt in may cause head gasket failure due to the uneven expansion/contraction rate.

Yes, it'll work as long as it's the right size. There is a tightening sequence for head bolts. Do the middle ones first, then the others.
