1986 mercury classic 50 problem

Just redid my carbs, replaced gaskets etc. and now she seems to run good but stalls everytime I put it in gear forward or reverse. I can finally get it to go if I very lightly feather the throttle.
when I pulled apart the carbs and cleaned very well, it did not seem that the jets were set but rather just found them screwed in all the way, so that is how I reinstalled them. Like I said, it runs great just having problems engaging. It does use quite a bit of gas but that is probably normal for an old 2 stroke.
Any help would be appreciated.

I would really appreciate that.

It only seems to do it on the water and not in the driveway with the ears on. sparks good, fuel lines all new and tight, and idles great in neutral.
