1998 Johnson 25hp idles but dies with throttle, ran perfect until yesterday

Hi guys, my 1998 Johnson 2 stroke tiller has always run great, and has continued to run flawlessly to date this summer until today, completely out of the blue, I launch the boat and it runs fine at idle but sputters and dies when I give it throttle and try to go. It will rev up a bit in neutral, but not in gear under load.

Motor ran great just yesterday, I'm baffled. To me it's symptomatic of water in the fuel? We did get a lot of rain recently but haven't had trouble in the past with rain. I tried another fuel can with a different fuel line and it ran pretty much the same, but I still wonder if it could have water in the float bowl now and even running it on a clean tank won't remove that problem? Any ideas?

I can't actually see water in the bottom of the tank that's suspect, I primed some into a jar and it looks good....more baffling. I think I'm about to pull the carb next. If I can't find water, what should I check next? Again, boat ran flawless all last week, so I have to think it's something stupid/simple here.....I checked the screen on the fuel pump too, no problems that I can see......
