I changed the oil/filter at the recommended 20 hour interval today. The manual called for 5.5 Liters of oil to refill (5.8 quarts) Once I added the oil, the level is well above the top notch on the dipstick. I realize that the filter will "absorb" some of this oil once the engine is cranked over, but why does it register so high?

As you said, the filter will "absorb" some oil. If you drained it well and refilled with the 5.8 qts. it should be fine. Run it long enough for the filter to fill, let it sit at least 10min. and recheck. Next service, put in 5 even, run & check and then add to the proper level. Over full is not good.
