Had trouble starting last few trips, checked battery, oil, fuel and sparks. Sparks a bit dirty but not overly so however replaced with new ones for the summer and she started right up. Is this normal - does it need really clean sparks to fire up or could it be something else? Seems to be running really nicely now but not sure what to expect?!

You would be surprised what a fresh set of plugs will do. May have had one fouling. Two strokes in general can be touchy about their plugs. If it continues I would check for water or dirt in the carbs.

Plently of unburnt oil in the system and leaving it. Even notice the water @ the prop & how oily it is? Plugs on 2 stokes will always fowl quicker than a 4 stroke - unless you have an opti. I aways suggest to carry spares.

What engine is this? The last 140HP outboard Mercury made was in 1981.

Sounds like a 3.0L 140 LX Mercruiser....

My guess, since he posted in the Mercury forum and it has carbies (plural) that it's an outboard.
Merc also had a 140 OB in 2001.

Thank for your help. Yep 2001 outboard 140 hp. Think its the international export, otherwise think its usually 135hp. Carbies seem pretty free of dirt but could do with a thorough cleaning I'm sure but not too sure how to go about it as i'm pretty new to this kind of motor. Not sure about old burnt oil in engine and wouldn't know where to start in regards to that, though exhaust through prop not overly oily. Think she's pretty right now but will invest in a new set of spare sparks - amazing what a difference it makes.
