2001 Mercury 60hp 2 stoke stalling

Hello everyone,
This is my first post, I have been reading the forum for the last two years. We bought our first boat last year, 2000 Crest Sport. It has a 2001 Mercury 60 hp 2 stroke. S\N OT298429.
We have not had any problems until last weekend, Last days of vacation on Norris lake in Tn. We were heading back to the dock and motor immediately lost all power and stalled. First thing I checked was prop to make sure I didn’t get a line wrapped up? (Happened to us last year and had to replace lower seals) We were running about 4500 rpms, pumped the bulb and it seemed full. Apparently I neglected to top of oil, not sure how low it was, but I used most of a gal jug. We did not get any overheat or low oil warnings. After adding oil, we tried restarting and it fired right up. After about 1 minute at 5000 rpms it did it again. We let it sit for 5 minutes and tried again, it fired up and we made it back to dock at about 2500 rpms. Next day we decided to put it on the trailer, on my trip to the marina I ran it about 5200 rpms for the 10 minute trip. No problems.
Is there a emergency engine shutoff for low oil? I did not get any warning beeps or buzzers.
I am planning on replacing inline fuel filter, gas line and bulb and possibly rebuilding fuel pump. Mostly because of age of motor and we boat here in Tennessee until October.
Any advice would be greatly appreciated.

Have you checked the buzzer and wiring to the sending units to see if the buzzer works? On my 90hp 2000 model all I have to do is ground the wires at either the OH or low oil sensor to see if beeper works. I've never had a situation like yours with mine so I don't know if it goes into llimp mode or not. I suspect that it does not have that level of sophistication. My beeper did go off one time due to low oil due to boat rocking in swells. Just added a quart and buzzer went away as you would expect. Does the tell tale spew water?

Yes sir, getting a steady stream. I have searched high and low to see if there is a engine cut off with no luck. Just have to locate buzzer now.

Update: Changed fuel filter and hasn't happened again. Cut open old filter and it is possible that the filter wasn't changed in may many years. Still going to rebuild fuel pump when parts come in.
