2001 Yamaha VMAX 150 2 stroke carb'd overheats when trimmed up and idle

If I enter skinny water and have to trim up the motor (not out of the water) the engine will overheat after 5-10 minutes. The impeller appears to be working as water is still coming out the tell tale at a constant steady stream. No dribble. Not moving fast maybe 3mph low RPMS. All intakes are still under the surface. Once I enter deeper water I trim the motor down all the way and idle until the warning light goes off. Then I take off. At full speed it never overheats. Only seems to be when tilted up and idling through shallows. I got a new impeller in January 2015. Full discretion last year I received some poor advice that it was ok to crank the motor out of water briefly before launching as long as it was only for a couple seconds. This was helpful since I wasn't holding up the ramp when I launched getting a 2-stroke to turn over. Did this about 12 times I approx. last year. Stopped once I saw this overheat starting to happen. I've had the boat and motor for about 4 years and it never used to do this. I've kept up with yearly maintenance as well. I'd welcome some thoughts.

It's supposedly the yearly recommended service from Yamaha. Which is what I requested of the dealer, but a water pump was not replaced to knowledge
