2003 Honda staling ! Any thoughts where to look

I’ve owned my boat 4 years and my 2003 Honda 130 has never stalled , not once! So , the last two days it stalled twice. First time at idle while while I was fishing and the second time I throttled back to neutral from running to a spot . both times the engine was running for at least an hour , so fully warmed up. First 4 seasons I used the chit out of the boat, but this season maybe once a week sometimes the boat sat for up to 10 days. So gas is older and has been sitting a bit. I put some fresh gas in with some stabilizer and I was going to change out the water separator filter. I changed this last winter when I winterized the boat, been using the boat since beginning of May. If water separator doesn’t fix issue where else should I look?
