200hp Thermostat question

J200TXEIB 1991 Johnson 200hp.

I removed the thermostats when I bought this boat about a year ago because I thought I had a overheating problem but it ended up being carbs, tuneup, and electrical issues. I got all that repaired.
I have been running it without thermostats since last fall and it seems to be ok, But my question is: Will it run to cool like this?? and will this keep in in the Quickstart mode??? How do I test the thermostats?
I can blow through both thermostats with my mouth with them at room temperature, but one is a little more open than the other. These are the black cone shaped with a spring. I'm afraid to install them without knowing if they are ok.
I need some advice.

No, you don't want to run without thermostats since it'll be running much too cool. You should be able to put the thermostats in a pan of hot water and measure the temperature at which they open, or you could install them and monitor the head temperatures at idle. The heads are supposed to be at about 145 F at idle, and as the rpm increases the thermostats lift off their seats allowing greater water flow and the temperature drops down to about 125.
