2011 115hp 4 stroke possible iginition/coil management issue help

Late 2011 115hp Four Stroke in a 2012 aluminum full windshield fishing boat.

Yesterday hit the lake. Made ~11 mile WOT run to first fishing spot with daughters. Fished for a hour or so and went to go to next spot. Just as it came up on plane the power started to surge. I dropped it to a idle then neutral. A few seconds later it started to run extremely rough like it was dropping cylinders one at a time. Until it died. Unable to refire at the time. No cell coverage in this area of the lake so got the Terrova pointing us in the right direction and started the slow trip towards civilization. Not much I can check on the water. Fuel filters were fine, etc visually I saw nothing. Several times over the next couple hours I tried to fire it up thinking maybe it was flooded for some odd reason. It fired up multiple times and purred like new but only short lived. Usually less than 30 seconds, a couple times a minute. Enough to power up to say 5mph and get that much closer to a area with cell coverage. Each time the same scenerio. It would start to surge/idle extremely rough until it felt like it was down to one cylinder since it was soooo rough. At this point or nearing it each time I just flipped the ignition key since there was no reason to see it flame out in pain per se.

I am fairly certain not a fuel related issue. I have only put gas in the this boat from the same gas station since new almost 5 years ago and have added a gas stabilizer to every single bit of gas that has ever gone in it (Star Tron). The boat has gone back to the original dealer every single year for a annual check-up/maintenance.

What to look for?
Could it be anything that I could do/replace at home or is this a for sure it has to go back to a Mercury mechanic?

Now thinking about it I think this happened to me 2-3 years ago. I just now remember pulling out of one of the marinas and just as I got up on plane it surged. I stopped the motor wondered for a second if it was me doing something odd with the throttle... Started it back up and all was fine until yesterday.
