OK, I am looking at replacing the whole cabin. Do you goes think if I re-arranged stuff, would hurt the balance or integrity of the hull? Like take out the burners, and just leave a small sink, and maybe a small single burner. What I want to do is create more space in the living area, and lessin the space we don't use much. Any ideas would be helpful.

a boat that size can take a lot. don't cut anything structural like bulkheads, you should be able to tell whats structural. glassed in. most removable stuff is just screwed in. try to keep the load as balanced as you can, or you may find yourself sitting in the corner to keep the boat level. throw a sand bag in the pantry.
