3.0 Alpha One hesitates when cold

I have a 1997 3.0 Alpha One. When the engine is cold (running less than 5 to 10 minutes) it hesitates when I throttle up and I have to back off to prevent a stall. Once the engine is warmed up good it runs perfectly, even if I shut it down for a few hours. Is this a mechanical problem or possibly fuel-related? I run regular gas in it without any additives, and really don't know if the Ethanol is part of the problem.

Ayuh,... Probably a Choke problem...
