35hp 1999 Johnson overheating and re-torqueing head

Ok it's been asked before but I need some more specifics if possible.
we are test driving a 20' pontoon w/ a 35hp johnson. Ran for a few hours upriver. went fine. Got back towards the ramp and did some low idle cruising. A few yards before the launch and the hot light goes on w/ the annoying buzzer.... Cut the engine and retried (only after a minute or so)checking water stream. Stream was fine, buzzer sounded again. just pused it thelast few yard (I suppose abit risky) and cut engine again. Drifed in and tied off. Waited a longer time this time and restarted. Stream was fine again and hot warning stayed off.
Now the question 1)Would you keep the boat? 2)What should I suggest to the dealer (remember I'm not obligated to keep this at this point) 3)Manual says to re-torque the head and exhaust cover. Is this necessary in a brief case like this?
Wife's boat and she's not real happy at this point...
Oh and an update on any service bulletins, or recalls, or idiosyncrasies ect for this 3 cylinder would be appreciated....
