90hp Running Hot

My 1975 Chrysle 90HP model 907HB is running fine but the water out of the telltail is real hot but the flow is great, I put a new head gasket, and Impeller. I took the thermistat out about 2 years ago and the water has never been this hot before. I will try almost anything

How hot is real hot? How long can you hold your hand in the water? Water temps of only 150 degrees or so will burn the crap out of you.

How hot should the water be about? I am thinking of taking the lower unit off again and looking at the water pump again to see if I for got to put the shear key in.
