Engine want accurate pass 2500rpm sometimes . Then runs like nothing wrong. Then cuts on and off like you turn key on and off doesn't do this all the time. Checked temp sensors
bucks at high speed sometimes .New sparkplugs checked fuel top to bottom checked spark on all cylinders good , compression 125psi all cylinders( new water pump, followed Evinrude's procedure on gluing all parts in place). checked rectifier battery voltage increases with rpm Removed flywheel checked magnets good, ohm stator and looked for hot spots found none, checked using the procure for timing out of water good , ignition switch have not checked the only thing I can think of is a bad power pack No warning horns when it does its thing Always happens why down the lake have to run back at about 1800 rpms to dock .Sometimes it will get up on plane run fine.( 92 Evinrude VE120TLEND ) Thanks

check your sparkplugs it may show a faulty cylinder somewhere.
Failing coils can do this, look for cracks and clean grounds

Are you over rev? That's a rev limiting pack I believe. I'd throw a pack at it but ...others will hate that idea

make sure you try a run at night and look for leaking sparks before you do the pack

Had so many problems with fuel. Although I doesn't sound like a fuel problem I would try looking for bad fuel connections and leaks and then try a jug of fuel with the end of the hose stuck in it. This is less expensive than throwing money at it with electronic parts.

certainly don't want you running engine hot but try disconnecting the white and brown wires when it happens, if it runs good then you know your going into S.L.O.W. mode and may be getting a faulty signal if not actually overheating.

Take its temperature at the top of the heads while in the water (not on muffs). Too hot to touch is too hot (160F or over). Use your IR gun if you have one. Look for something around 130-140F.
