Achieve smooth surface on DIY tiller center console

I'm building a tiller center console similar to this one attached. It's not as complicated, more like just a box with a 3rd party grabrail at the end. My design is strong enough to support Fat Albert so I really don't think I'll need fiberglass to add strength. That being said, I want a nice smooth finish as opposed to it looking like painted marine plywood screwed together. I plan on sealing the console with epoxy resin but would like to have nice rounded corners too.

I noticed in one youtube video people use fiberglass chopped mat with epoxy resign to round the edges and then sanded.

How would you achieve a nice, smooth finish over the console including the edges? Is this the best way to achieve the results I desire? I know NOTHING about fiberglass or epoxy resin so please give me the step-by-step For Dummies version.

Sealing your plywood with 4 coats of epoxy resin and then painting over it will give you a very nice smooth finish. This is plywood with 4 coats of epoxy resin:
