Angus Top Sirloin Steak with fried rice and a salad. Yup, my Social Security came in this month. Now we'll go back to fried bologna and pinto beans. The individual with the larger weight/girth ratio gets the bigger steak,plus Mrs. Tyme likes hers well done and I like mine medium rare.

Almost had a major error here. I left out the "g" in Angus for the topic of this post. I got to edit the post title before my error was posted. Whew!!!

Looks great!

I cooked a pair of steaks for us tonight. The wife complained when she said blood was pooling on her plate.
(And the problem is...what?)

Ok, I cranked up the grill and toasted hers to the point of char.

Good vittles!

I always place the Admiral's steak on first till her's is ready to flip over, then I place mine on the grill. Her: well done. Me: Rare to medium rare.

Made me hungry Tyme!

We did the same thing a couple of nights ago ... but with Venison steaks. Good healthy meat, and a little cheaper if you know the right folks.

Top sirloin is an underrated and underutilized cut IMHO. I find it very flavorful when prepared right, and of course it doesn't break the bank. I usually poke holes in mine with a fork, pour Worcesteshire all over, sprinkle with coarse sea salt and freshly ground black pepper, let them sit for a half hour or so, then flip and repeat. Simple and yummy, and the hour or so on the counter allows them to come up to proper temp. Good stuff. Do you prep yours in any way, Tyme?

Incoop, here's a marinade that I use all the time. It's great on beef, pork and chicken and is OFF THE CHAIN on lamb:

1 cup soy
1cup merlot
2 cups orange juice
1 tsp garlic
1tsp dried ginger
1tbl lemon juice

Shake well and keep any left over marinade refrigerated to use later. I usually put the meat in a large plastic freezer bag add marinade to cover and let soak overnight. Yum!

Pretty much the same as you prepare yours. Fresh ground black pepper, sea salt and the fork holes. I serve the Worchstershire sauce at the table. We were too hungry to allow them to set very long but they were at room temperature before throwing on the hot grill. I allow the steaks to sit on the grill for about 2 to 3 minutes then turn them a quarter of a turn to a new site on the grill to give them that nice grill mark.:D

that's a nice, well seasoned cast iron. Maybe seen a lot of bacon in it's time? :D

I'm not sure where we got that skillet. It's either the Admiral's mother's or my grandmother's. We have about 6 of them in the house. And yes,there has been goodly amount of bacon,etc sent thru it!!

those are the best kind, they don't cast them as smooth as they used to, or the old ones are worn smooth, IDK but they cook better.
