Ok...So I am new to the boating...I picked up a fish / ski boat....but where in the word do I tie to to pull skis or a tube, etc? I have a big 90hp outboard in the way, and dont see anything either to do such a thing??

Either a tow structure that attaches to the rear deck around and above the OB or a tow bridle, rope ties to each rear tiedown with a pulley to trail behind the OB.

would the tiedown bridle idea not be bad with putting stress on the boat?

+ on the tie down bridle. The tow structure just takes up too much room on the rear deck plus it's pricey if you purchase one. I purchased a tow harness with the pully from Academy Sports for $14 and it works great for tube pulling. The tow structure would probably work better for skiing or knee boarding, but don't worry about the stress on the boat it will handle it fine. I have a Stratos 266 Fish Ski with a V4 110 Evenrude.

Definitely the bridle. It connects from one tie down to the other and leaves enough room to clear the outboard, and keep the tow rope centered behind the boat. Of course, there are plenty of people pulling skiers, etc. from just one of those tie downs. There's no more force applied to that tie down from a skier, than the upward push of the weight of the boat itself when trailering.

As everyone else has said, either a bridle or a ski pylon. Our pylon slides into the same place where the rear fishing seat mounts. When it's attached, it's always in the way, but it removes and slides into the ski locker pretty easily. One note, the pylons can't be used for tubing. Too much stress, if you are going to do tubing, do the bridle.
