Not a trailer expert by far, can anyone tell me if these are just regular hub fittings? If not, how do they get serviced?

AZMinyard: It looks like a superlube axle. Pull that rubber and see if there is a grease fitting inside.

As DanMK says, it looks like a spindle lube cap. Could be a grease fitting behind the rubber plug if it's a spindle lube, or on the back side of the hub if it's a "hub lube". Here's the instructions (with a cross section of what it looks like) for the sup-r-lube spindle lube, and also the hub lube. Look 2 or 3 pages down for the cross sections.

Either type forces the new lube in behind the rear bearing and the old stuff comes out the rubber plug. Pump it till you see new stuff coming out. Works best if you jack the wheel up and turn it slowly while you're pumping in the grease.

Yes -- it is a standard grease zerk behind the boot. Remove the boot to access it. Stick the grease gun on it and give it a couple pumps.
