Could a bat switch loose connection some how while i'm running and blow my rectifier? Also I currently have a 1,2 or all switch, but I only need to charge one battery off the motor. Would a simple on/off switch work? thank you.

Yes -- a loose connection can blow a regulator/rectifier. Don't understand your question about charging one battery. If you only have one battery to charge you don't need a switch period..

Just in case something was drawing power I'd like a switch to kill everything. I'd like to replace it with a simple on/off switch if that would work? thanks again.

Where you put the switch and what you switch with it is the issue. You cannot use a cheap switch if it must carry the current going to the starter. It will fry in a heartbeat and besides, the terminals aren't big enough to accept battery cables. If all you want to switch are the accessories, then yes, a 20A toggle switch will work fine.
