2) Current prop manufacturer, model, aluminum or stainless as a minimum.

Ayuh,... The 1 with the best blade design for your hull, with the tallest pitch that allows the motor to turn 4800rpms at Wot...

One of the fastest props you can put on a Baja is a Mercury Mirage Plus. As far as pitch goes, we'll need to know what prop your running, your wide open rpms, and which 454 (mag?).

Is that a standard Mirage or a Mirage Plus? The Plus (newer version) has a little more cup and is a little faster.

Your MPH and RPM look good for a 21p.... that might be all the faster its going to be with the 7.4L.
