Big block vs small block

I currently have a ford 460 bbf in my jet boat. I was thinking of swapping it out and putting a 350 sbc in it. How would the boat operate? All I see in jet drives are big blocks hooked up to them. Is it cause they produce more torque? What's your thoughts?
