Boat dies at wot

Ok so I bought a new boat. A mariah shabah 180se with a 4.3 mercruiser lx+ alpha one. I did a full tune up on the motor before I took it out for the first time. Sometimes the boat starts right up other times it struggles to start but I do get it started it seems to start fine especially when it's warmed up. The main issue that I'm having is when I'm going down the lake at WOT boat gets up to speed and seems to plane out good. With just 2 of us on board the RPM'S are around 4200 which seems a little low???? and that's trimmed out. But the boat just dies while going down the water shuts right off like I turned the key off when I come to a stop I put it in neutral then it starts right back up and away I go back up to WOT and it will shut off again. I've had the boat out 4 times and it seems to be getting worse. Yesterday it died about 6 times in 3 hrs. Not sure if I should take it somewhere or what? Well I wanted to see what you guess had to say???? Any help would be great!

the year, the serial number, carb/efi??
fuel filters, anti-syphon, clogged tank vent, loose wire,etc,etc.

It's a 1997 serial #0k170684 it's a throttle body 2bl with electric fuel pump.
Changed fuel water separator at time of tune up. Not sure where or what the anti-syphon is????? And I'm sure the tank vent isn't clogged because when I fill it up every time it comes out the vent. Is this normal???? Where should I start checking for loose wires????

Shutting off like with a key and fuel starvation and dying are 2 seperate issues. You can run with the flame arrestor off and see if the fuel injectors stop flowing fuel when it dies.Another is to watch the gauges. Do they drop off too, then its electrical. The anti-syphon is a spring loaded check valve at the tank. Sometines they get restricted .
