Boat kicks up a "rooster tail"

I have a 16 foot Bass Tracker Deep V. I replaced the 25 horse with a 40 HP mercury. Both have the same shaft size. when cruising at the higher speeds 17 MPH + the boat kicks up alot of water, approx up to 4 feet on both sides. I did just put a doel phin stabilizer on it but did not take care of it. When adjusting the Manuel trim I can get it so it does not kick up the water to bad but the boat pushes alot of water losing speed. Does this seem to be a problem that can be corrected? Any info is appreciated, if you need more info from me let me know. Thanks Bryan

Sounds like the engine may be mounted too low on the transom.Insure that the anti\ventilation plate of the engines lower unit is roughly level with the bottom of the boat at the transom when the engine is positioned in its normal "run" position.If its too low it will not only create excessive drag but also tend to kick up water ,particularly with a doel fin installed.
