thats what I do now, I shift my butt to the right. lol
I'll triple check the measurments to see if its exactly centered.
If the motor is centered correctly, check if your outboard has a torque tab underneath the ventilation (aka cavitation) plate. It looks like a small skeg.
If you have it, they are typically adjusted by loosening a screw. You can fiddle with it by rotating either left or right, to compensate for the prop torque.
Another trick I've seen and read about, is installing a trim tab on your transom (on the affected side), to adjust the pitch and running attitude of your boat. I'm not referring to the hydraulic tabs; there used to be fixed trim tabs available years ago and they might still be around today.
If all else fails, perhaps you can also shift your starting battery or fuel tank to the affected side.
