bogged down when running

Ok have a 1991 200 hp looper v6 evinrude. Had the boat out and was running fine 5500 at wot for about 2 miles and then all of a sudden bogged down and wouldnt go over 4500rpm. Kinda sounded like it was missing but as soon as I would throttle back would sound fine. The mechanic I had it to had me take out the thermostats. My question is would this have anything to do with that? Have done compression check and all are within 5 of each other 90 to 95. Getting spark from all coil packs. Also it was just rejetted, fuel flow is ok. Stumpedhere.....

with a spark tester that has the eight hookups for the 8 cyl but only used the 6 since its a 6 cyl. and it has where the arc jumps back and forth. This was done with just turning the engine over, not running. Hope this helps in what your thinking. Since I did see on other threads about checking, cant remember how, but with the engine running and at intervals when their engines bogged down.
