Calibrating mixture lever on 50s 7.5 hp seahorse?

I just replaced the coils on my old 7.5 hp motor thanks to some suggestions from a few weeks back. The motor definitely runs better. I had it running well, but had a hard time getting the motor to wind out a bit. even at full throttle it wasn't doing much. I started adjusting the lean/rich fuel mixture, but not sure where it should be. What is the proper procedure to calibrate the knobs?? I can loosen the but that hold the shaft to the carb, but just don't know where to tighten.... Also the motor seems to get a bit hot after a while. I think it is running rich due to my bucket of water getting rather black and sooty looking. Not sure if this is normal. It looks pretty bad in there...
