out of curiosity, why is it a bad thing to put a whale tail/dolphin on? I thought they reduced cavitation, increased surface area and made the trim more effective, allowing you to get onto a plane a bit quicker? Is it only the case for small boats and outboards?

Sounds like you've been reading the promotional ad for them.
Cavitation is rarely a problem when taking off, (the prop is deep in the water), especially if it's trimmed all the way IN. Unless there are other issues, like the drive mounted too high, or the wrong prop.
The "Increased surface area" adds drag. Slows you down, burns extra fuel.
Time to get on plane depends on many factors; weight, engine torque, hull design and condition, loading.
I've talked to a couple of boaters who thought a tail would help performance. They were both disappointed.
